Cheese Day

It’s Cheese Day on Sam the Cooking Guy.

Shiitake Mushroom Omelette   

2 cups – Shiitake Mushrooms, twist off stems, slice up and add to hot pan with olive oil….after they’ve cooked for a bit, add butter – add small clove of garlic

3 eggs – scramble  – heat pan with butter add scrambled eggs and add salt & pepper  – add vermouth as it cooks.

In a bowl add cut chives 1/3 cup of Ricotta and mix

Spread ricotta on omelette, add shiitakes, then more chives, and top with Parmesan cheese.

Cacio e Pepe –

1/4 pound – Spaghetti pasta – boil water and add spaghetti and salt for 7 minute. – stir occasionally

In second pan – 2 table spoons of olive oil – 2 teaspoons of fresh ground pepper –  take some of the pasta water and add to pan, after pasta done add to pan, and mix ….add some of the cheese, add more pasta water and mix, and then add  cheese, mix for another minute. 

Microwave a plate –  add pasta , top with more cheese

Pechrino Romano cheese – 1/2 cup shredded

Grilled Cheese Sandwich

 Cut slices from round sourdough loaf.

Slice up soft red tomato

Spread Japanese mayo to bread, add slices of American cheese, and slices of smoked Gruyere. Next add some avocado slices, add salt and pepper, and some crispy bacon. 

Add more butter to outside of one side of sandwich and place on grill. Flip over and add butter to second side and grill.

Cut and serve. 

Mexican Lasagna 

1 lb ground beef into pan and brown, and then strain. Next add half of chopped onion, and some sliced garlic. Add a can of diced tomatoes, and ½ a pack of fajita seasoning, and let simmer for 5 minutes. Next add a cup of Monterey jack cheese and now add lasagna noodles, and mix.

Meanwhile using ½ pound of lasagna noodles, break them up and add them to pot of boiling water.

Top with more jack cheese and place in oven at 350 degrees for 20-25 minutes.
